Cheesy Baked Shrimp (Karides Guvec)

Cheesy Baked Shrimp (Karides Guvec) is a delicious Turkish dish usually served as an appetizer or a hot meze in seafood restaurants.

Equipment

  • 1 kitchen scale
  • 1 measuring spoons
  • 1 Sharp knife
  • 1 frying pan
  • 1 grater

Ingredients

  • 21 oz shrimp (peeled and deveined) (600 grams)
  • tbsps butter (1½ tbsps (20 g) + 2 tbsps (30 g) separately)
  • 3 cups sliced button mushrooms or chestnut mushroom (250 grams)
  • 2-3 Turkish green chilies or 1 bell pepper (cut in half, seeded and sliced)
  • 3 cloves garlic (minced)
  • 5 medium chopped tomatoes (approximately 1 lbs, 450 grams)
  • ½ chopped red chili or ½ teaspoon flaked chili (optional)
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme
  • 2 cups grated kasar cheese or cheddar cheese (200 grams)

Instructions

  • Preheat the fan oven to 400° F (200° C).
  • Melt 1½ tbsps - 20 grams of butter in a frying pan and sauté the mushrooms on high heat for a few minutes, until they are slightly softened.
  • Add the peppers and garlic, and sauté for a couple of more minutes.
  • Stir in the garlic then add the tomatoes, chili, black pepper, and salt. Stir to combine then gently cook on low heat for 6-7 minutes.
  • Take the pan from the heat and add the shrimps, give it a stir.
  • Spoon the mixture into an oven dish, Güveç dish, or 4 individual ramekins. 
  • Sprinkle on the cheese and thyme. Cut 2 tbsps - 30 grams of butter into cubes and spread them over the cheese.
  • Cook in the preheated oven for 10-12 minutes or until the cheese on the top is melted and the prawns are cooked.

Notes

  • Don't over cook the shrimps as they get rubbery and lose their taste. If you are using small shrimps, reduce the cooking time to avoid over cooking them.
  • If you use frozen shrimp for this recipe, make sure they are completely thawed before cooking them.
  • Leftover Karides Güveç would keep for up to two days when refrigerated in an airtight container.
  • A short video is attached to the recipe card to show how to peel and devein raw prawns.
  • You can freeze the leftovers if you used fresh prawns. However, if you made the dish with frozen prawns, I don't recommend freezing the leftovers!
